Spinach with Daiya. This is a quick, easy meal that we make when we need to make something healthy and yummy NOW for E.
Directions: Saute 8 ounce of baby spinach in about 1 T. coconut oil over medium heat, adding the spinach in batches and allowing one batch to wilt before adding the next. Once the spinach is soft and wilted but still bright green, remove from heat. Stir in just 2-3 T. shredded Daiya cheese (vegan, gluten-free, soy-free cheese), and let it cool to warm before serving to your little one.
